A flavorful and easy homemade beef chorizo recipe made with ground beef and a bold blend of Mexican spices — perfect for tacos, breakfast skillets, or adding spicy depth to your favorite dishes.
Ingredients
1 pound ground beef (80/20 preferred)
3 tablespoons apple cider vinegar
2 tablespoons chili powder
1 tablespoon smoked paprika
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon ground cumin
1 teaspoon dried oregano
1/2 teaspoon ground coriander
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon cayenne pepper (optional for extra heat)
Instructions
1. Place the ground beef in a large mixing bowl.
2. Add all spices, vinegar, and seasonings to the bowl.
3. Mix thoroughly using your hands or a spatula until everything is well incorporated.
4. Cover the bowl and refrigerate for at least 2 hours, preferably overnight, to let the flavors meld.
5. To cook, heat a skillet over medium-high heat.
6. Add the chorizo mixture and cook for 7–10 minutes, breaking it up as it browns.
7. Use in tacos, eggs, nachos, or freeze for later use.
Notes
You can substitute ground turkey or pork if preferred.
Adjust the cayenne pepper to control heat level, or omit for a milder chorizo.
Store uncooked chorizo in an airtight container in the fridge for up to 3 days or freeze for up to 3 months.
